Muntrie Pancakes

Muntries are packed with antioxidants and Vitamin E!


1 tbsp Kaiyu Superfoods freeze-dried Muntrie Powder  

2 tbsp water

2 cups self raising flour

½ tsp bicarbonate of soda

1½ cups milk (substitute almond milk for dairy free)

⅓ cup caster sugar

¼ tsp vanilla essence

1 egg

Maple syrup

Combine the 2 tbsp water with the muntrie powder, stir and let sit for a minute to make a thick muntrie puree. Put the rest of the dry ingredients (except topping ingredients) in a bowl and make a well in the middle. Whisk together the wet ingredients plus the muntrie puree and pour into the well. Gradually mix together (the mixture should be quite thick but still able to be poured). Use your measuring cups to take out the mixture and pour onto a non-stick pan (I used the one third cup, but use larger if you want bigger pancakes). When you see bubbles popping and leaving holes on the top side of your pancake, it is ready to flip. Cook for a minute on the other side, then remove and put on a plate. Top with strawberries, bananas, maple syrup and ENJOY!
