River Mint and Green Papaya Salad
A healthy refreshing salad with loads of nutrients and fibre!
1 tsp Kaiyu Superfoods Rivermint Powder
1 Green Papaya shredded (we used a Mandoline)
1 Tomato chopped into bite size pieces
2 cups Bean sprouts
1 tsp Sesame oil
1 lime juiced
1 tbsp fish sauce
2 tbsp fresh coriander chopped
Chilli to taste (we used some hot chilli sauce- mixed in a bit and those who liked extra chilli added more to their own plate)
Combine the papaya, tomato, coriander and bean sprouts in a bowl. Toss together with two forks. In a jug or small bowl, combine the sesame oil, lime juice, fish sauce, chilli and Kaiyu Superfoods River Mint Powder. Pour the Rivermint mix over the papaya mix and toss until all the salad is well coated. Enjoy!
This dish is a good source of VItamin C, Vitamin A, antioxidants, fibre, folate and also contains iron.
NB: If you are pregnant consult your medical practitioner before consuming green papaya uncooked.
