Lamington Protein Balls with Kakadu Plum and Hemp
You don’t need to feel guilty snacking on these chocolate treats! They are filling and healthy! Each ball contains natural Vitamin C along with protein, magnesium, copper, manganese and iron.
Makes about 25 balls. Each ball contains approximately 6% (female) and 10% (male) RDI of Iron, over 50% RDI of Vitamin C and 8% RDI Magnesium.
1 cup pepita seeds
1 cup dates
1 cup water
½ cup dark choc bits (We used dark cooking chocolate)*
⅓ cup Kaiyu Superfoods Kakadu Plum and Hemp Powder
⅓ cup cacao powder
½ cup coconut
Soak dates in the water for at least 15 minutes (while you prepare the other ingredients). Put the pepita seeds in a blender and blend until they have a finely chopped consistency. Place in a bowl.
Blend the chocolate until fine and leave in the blender. Remove the dates from the water (but save the water) and place them in the blender with the chocolate and blend. Return the pepita seeds to the blender.
Add the Kakadu Plum and Hemp, cacao and coconut along with 3 tablespoons of the date water into the blender. Blend until the ingredients start sticking together.
Roll bits of this mixture into small bite sized balls. Refrigerate and enjoy the health benefits!
* Use cacao nibs (healthier and vegan) if you don’t want to use dark cooking chocolate. The balls will not be as sweet and slightly more bitter.
