Vegetable Protein Rosti

Healthy potato rostis packed full of protein, iron, vitamin C, antioxidants, manganese with magnesium and potassium.

Serves 2 

Ingredients

1 sweet potato

3 medium potatoes

1 zucchini

½ tspn cumin

½ tspn ground coriander

½ tspn tumeric

3-4 tablespoons Kaiyu Superfoods Kakadu Plum and Faba Bean Powder

Olive oil for frying

Salt and pepper for serving

Method

Peel and grate potatoes and sweet potatoes. Grate zucchinis. Mix all in a bowl. Add the Kaiyu Superfoods Kakadu Plum and Faba Bean Powder and spices and mix.

Heat the oil in a frypan. Put one spoon of the mixture in the pan and flatten to no more than 1cm thick. Repeat until pan is full. Fry on one side (a few minutes) until golden brown. Flip and fry the other side. When both sides are crispy and golden brown take out of pan and drain on paper towel. Serve with salt and pepper. If you like serve with your favourite sauce or salad of your choice. Enjoy!
